A cool salad for the winter from zucchini, tomatoes and bell pepper

Ingredients

  • 1 kg zucchini (peeled)
  • 1.5 kg tomatoes
  • 4 bell peppers (any color)
  • 5-6 cloves of garlic
  • 100 g sugar
  • 1 tbsp. l. salt
  • 1 tbsp. l. 9% vinegar
  • 1 tbsp. l. vegetable oil

Steps

  • Cut the courgettes into medium-sized cubes (1.5-2 cm). Young zucchini can be used together with the skin and seeds, while the overripe ones must be peeled off and the seeds removed.
    Cut the tomatoes and bell peppers into medium cubes. If you wish, you can peel the tomatoes and peppers, I do not.
    Put the chopped tomatoes in a saucepan and place them on the stove. Add sugar, salt, mix gently. Bring to a boil and cook the tomatoes for 10 minutes, stirring occasionally.
  • Then add the zucchini and pepper. Pour in vegetable oil. We mix.
    Bring to a boil, cook vegetables for 30 minutes.
    Add chopped or pressed garlic 15 minutes before cooking.
    Stir gently from time to time.
    Add vinegar 1-2 minutes before cooking and immediately cover with a lid.
    Bring to a boil and remove from heat.
  • Pour hot into sterilized jars and close with sterilized lids.
    We immediately turn the sealed cans upside down, wrap them up and leave them to cool completely.
    A delicious preparation for the winter from zucchini and tomatoes is ready!
    It turned out 3 cans with a volume of 0.45 l + a little more.
