Steps

For the recipe, we will need meat, pickle and a shaving brush. Let's prepare all the products and start.

For the brine, mix everything in a convenient container, all the ingredients per 1 liter of water. Stir until the salt is dissolved and ready.

We stick toothpicks into the breasts, quite often. There are special devices for piercing meat, you can use them. We send the hedgehog breasts to the brine for 15 minutes. The brine should cover the meat completely.

While the breasts are salting, prepare a shaving brush. In brine and in a shaving brush I use young thyme, it grows all winter on the windowsill of the Other Kitchen (you can take your favorite dry seasonings). Melt the butter and add garlic, salt, pepper, juice of half a lemon.
