Hello everyone! Today I'm making San Sebastian cheesecake or, as it is also called, burnt cheesecake. He got this name for his signature burnt top of the cap. Look you can see the video, there is nothing complicated in cooking.

Cheesecake San Sebastian - Basque burnt cheesecake

  • Prepare the dish and line it with baking paper. I have a detachable form of 20 cm.
  • Preheat the oven to 220 ° C (top - bottom).
  • Mix cream cheese with sugar and grind until smooth.
  • Stir in the cream and flour so that there are no lumps.
  • Add vanilla sugar, lemon juice to cream cheese and add eggs one by one.
  • Add cream and flour in several steps.
  • Pour the mixed cheese mass into a mold and bake the cheesecake for 30-35 minutes.

There should be a brown, burnt crust on top, but the cheesecake should remain mobile. It doesn't need to be overdried!

33 minutes passed and I turned on the grill for 2 minutes.

Burnt cheesecake
  • Let it cool down and refrigerate for at least 12 hours.
  • As a result, he gets the structure of a thick cream. This is delicious.
  • I stewed pears in caramel. It turned out to be an excellent and harmonious combination.

San Sebastian Cheesecake Recipe:

600 g cream cheese
150 g sugar
300 g cream from 33%
25 g flour (starch can be used)
4 large eggs (220 g)
1 tsp vanilla extract
1 tsp lemon juice
  • If you stew pears in caramel add lemon juice.
