Chkmeruli Georgian cuisine
Preheat oven to 200 degrees.
Prepare a baking sheet or baking dish for chicken.
- Wash well, dry the chicken, cut off excess. Cut the carcass into the breast.
- When cutting a carcass, there are no definite rules for what to cut, decide for yourself how you like best. Someone shortens the legs, someone leaves. Just be guided by your taste and the tastes of your household.
- Rub the chicken inside and outside with ajika.
- If spicy, dilute with vegetable oil. Leave on for 10-15 minutes.
- Gently place the chicken on a baking sheet without tearing the foil.
- Send to the oven until cooked.
Bake for 30-50 minutes depending on size.
Cover with foil for the first 20 minutes, then remove and leave to bake open.
- Pour milk into a saucepan, squeeze out the garlic, bring to a boil and leave to brew.
- Transfer the finished chicken to a board and let cool.
- Cut the chicken into portions, size at personal discretion.
- Taste the milk sauce.
- Place the chicken in a saucepan and pour over the sauce.
- Place on the stove and bring the sauce to a boil.
- Turn off heating. The chicken is ready!
- Chkmeruli is traditionally served with flatbread and fresh herbs.
