MEAT FILLING
- Finely chop two small onions and 3 garlic cloves and hot peppers.
- Add the chopped vegetables to the ground beef.
- Add 10 grams of salt and black pepper to taste.
- Add some dill seeds if desired.
- Mix the minced meat well and add water to it.
- You need to achieve the consistency of a thick porridge. In order for the minced meat to be juicy, but not runny.
- It took me about 150 ml of water (the amount of water may vary slightly).
- Cover the finished minced meat with foil and put in the refrigerator.
DOUGH
I take a mixture of premium and first grade flour in half and water and milk in half.
- Add water, milk, yeast, salt and sugar to the flour.
- Mix everything and add 1 tablespoon of vegetable oil.
- Knead the dough until smooth.
- Grease the finished dough with vegetable oil, cover with foil and leave for half an hour.
- After half an hour, divide the dough into two halves.
- One half - for one big pie - needs to be divided like this:
- 2/3 of the dough is the bottom of the pie, 1/3 of the dough is the top of the pie.
- Divide the second half of the dough into 3 parts for three portions of the pie.
Heat the oven to a maximum of 230-250 ° C degrees.
I will bake a large pie in an old cast iron skillet. I specially brought her from my parents.
- The diameter of my pan is 28 cm.
- Roll out the cake and transfer to the pan.
- Put the minced meat before reaching the edge.
- Roll out the top and place on top of the minced meat.
- Fasten the edges of the dough.
- Make a hole in the middle of the cake for steam to escape.
- Send the cake to the bottom of the oven for about 15 minutes.
- Focus on the rosy top of the pie.
- Grease the finished cake with melted butter on top.
