Today I want to invite you to make a homemade honey cake with thin cakes and delicious sour cream.
This cake is also called "Honey cake" or "Ginger".
This recipe was shared with me by my sister as a teenager. The cake is delicious, delicate and very aromatic.

Let's cook
Mix in a bowl
- 2 eggs
- 1 tbsp. sugar (200 grams)
- 2 full with a slide of Art. spoons of honey
- 100 grams of soft butter
Stir and put on a "water bath".
Pour hot water into a saucepan so that the water does not reach our cup.
While stirring, heat the mass until everything dissolves.
When everything dissolves and the mass becomes homogeneous, remove from the water bath and pour into a bowl in which we will knead the dough.
Let it cool a little.
- Extinguish 2 teaspoons of baking soda with two tablespoons of vinegar
Add to the dough, mix.
- Gradually add 3 tbsp sifted wheat flour and knead the dough
The dough is soft and sticky.
Sprinkle the board and dough with a little flour and transfer the dough.
Do not hammer the dough with flour, it should remain soft.
Form a small sausage and divide the dough into 9 parts.
We form each piece into a ball.
We roll the ball into a layer on parchment paper, and we will bake it on it.
When rolling, sprinkle the dough and rolling pin with a little flour so that the dough does not stick.
Roll out the dough thinly into a circle with a diameter of about 29 cm.
We remove the bake in an oven preheated to 180 degrees, for about 3-4 minutes.
In the meantime, roll out the next cake.
As soon as the cake has become golden, we take it out of the oven and immediately cut it to shape.
We collect the cut pieces, then we grind them into crumbs and decorate the cake with crumbs.
So we bake nine cakes and let them cool to room temperature.

Let's prepare the cream
If you have sour cream with a fat content of 15-25%, then it must be weighed in advance so that the excess serum is glass. It is not necessary to weigh thick and fatty sour cream in advance.
- to 750 grams of sour cream
- add 1 cup of powdered sugar (180 grams)
We mix. In principle, cakes can be lubricated with this cream.
But in my recipe, the cream must be beaten with a mixer, adding a pinch of citric acid.
The cream turns out to be very tasty, slightly sour.
Let's form a cake
Put 1 cake on a plate and coat with cream
So, in turn, we fold and coat all the cakes.
Cover the top and side of the cake with cream and sprinkle with crumbs.
We put the cake in the refrigerator for 6-8 hours so that it is well saturated.
