Must Try It: Custard Profiteroles

Last week, friends with children came to visit and brought with them several sets of profiteroles. They were delicious, but not at all like those that my mother once cooked.

Mom quickly told me their recipe on the phone, and I immediately began to prepare delicious profiteroles / eclairs (this is as convenient as anyone)

To prepare profiteroles, we need:

For the test:

Water - 1 glass

Butter - 100 g

Flour - 1 glass

Salt - 0.25 tsp l.

Eggs - 4 pcs.

For the cream:

Eggs - 2 pcs.

Milk - 1 glass

Sugar - 2/3 cup

Flour - 1 tbsp. the spoon

Vanillin - 1 sachet

Butter - 100 gr.

We put a pot of water on fire. While the water is heating, melt the butter in the microwave and add to the water. Water and oil should boil for a minute.

Then gradually add flour to the mixture and stir all the time. As soon as I add flour, I immediately turn off the gas.

I usually break the eggs into a separate bowl and whisk them lightly. Then I add everything to the slightly cooled mixture and stir the dough constantly.

In the end, it will turn out to be homogeneous and elastic.

Then everything is at your request. If you want to get confused and make the profiteroles beautiful, use a pastry bag, squeeze small profiteroles onto a baking sheet.

Remember that in the oven they will increase several times, so leave a small space between them.

In the oven, profiteroles at a temperature of 180-190 gr. should stand for 25 minutes.

The profiteroles are ready.

Now you need to prepare the cream.

Pour the milk into a saucepan and put it on the stove.

Beat eggs with sugar, add flour, beat everything well.

Add a third of warm milk to the mixture and mix everything well.

Then add eggs and flour to the remaining warmed milk and stir constantly.

We should get a homogeneous elastic cream.

Add 100 gr. To the warm cream. oil, and mix everything well.

Let the cream cool.

Then cut the profiteroles with a knife and fill the profiteroles with a teaspoon.

Top with chocolate topping or sprinkle with powdered sugar.

Profiteroles are eaten instantly - this is the only negative, but pleasure. obtained from tender and delicious pastries. will be remembered for a long time.
