Oven baked potatoes with meat and cheese

Today I cooked stuffed potatoes and sent photos to my friends. After the praise, each of them wrote that there was no time and energy to cook such beauty. Friends, believe me, the kind of dish is a hundred times cooler than the work and time spent on cooking.

To prepare potato boats, I needed:

  • Potatoes - 2 large tubers
  • Minced meat - 200 gr.
  • Sweet red pepper - 0.5 pcs. optional
  • Eggplant - 0.5 pcs. optional
  • Bacon - a couple of pieces
  • Cheese 100 gr.

We put to boil potatoes in their uniform,

and at this time, fry the minced meat in one pan, after 5 minutes add finely chopped bacon to it. We fry together for another 7-8 minutes.

Finely dice the pepper and eggplant.

Fry vegetables in a pan.

In a bowl, mix the minced meat and fried vegetables.

The potatoes are already cooked. Cut the potatoes lengthwise and spoon out the middle. You will have beautiful potato boats.

Mix the potatoes with the filling.

Grate the cheese. Add some to the finished filling.

Fill the boats with the resulting mixture / filling and sprinkle with the remaining cheese on top.

Put in an oven preheated to 200-230 degrees for 5-7 minutes until the cheese melts and acquires a beautiful golden color!
