Cabbage... It's a good thing - cabbage, don't you agree? It is needed in the soup, and as the main element of a hot hearty dish, it is indispensable for filling pies, and it goes "with a bang" in salads, as they say.
There are, of course, people who don't like cabbage. Well, so everyone doesn't like something in life. And just not to love is normal (everyone has different tastes), but to be afraid to try a new taste or combination, if you treat the product normally, is much worse.
I realized this when I was fed a very strange cabbage salad: shredded cabbage, raisins, smoked sausage, mayonnaise. Mayonnaise is an ingredient that I try to drive off the table, but... I ate salad. And I admit, mayonnaise is harmful, and the salad, surprisingly, is tasty, although the combination of products makes a very... eerie impression.
And this salad gave me the idea to look for new recipes. Because usually cabbage, despite all its potential, is used for salad very... scarcely. The classic "stolovskaya" version is cabbage and carrots, mashed and slightly warmed up to give juice, seasoned with a mixture of oil, vinegar, sugar and salt. And... everything, actually. Oh, well, also sauerkraut and pickled cabbage. But there are actually many more options!
I share the most interesting ones found.
Cabbage with avocado
Don't kick it, avocado is not so expensive that you can't afford it
So let's take
• Cabbage - five hundred grams
• Avocado - one or two as you like
• One carrot
• A little parsley
• A handful of good raisins
Thinly chop the cabbage, chop the avocado into thin strips, three carrots on a coarse grater, and grind the cabbage with carrots as usual - by hand. Then add the avocado, send a handful of raisins and finely chopped parsley to the same place, fill with a dressing of olive oil, lemon juice, salt and a spoonful of honey. The amount of lemon juice, honey and salt is variable and to your taste.
Cabbage salad with radishes and mint
We take:
• Cabbage and radish - the same amount by weight, 250 grams
• Cherry tomatoes - a quarter of the weight of a mixture of cabbage and radish
• Cucumber - medium size, 1 piece
• Mint - to taste, but just a couple of branches
Cut the cabbage, cucumber, radish into strips, and cut the cherry tomatoes into halves. Chop the mint. Mix everything in a salad bowl, fill with a dressing of olive oil, salt and sugar. As an option, add a spoonful of lemon juice or even lime to the same dressing - the taste will become much more interesting.
How is it? In my opinion - simple, quick, easy to remember, and most importantly - in the spring, when everything is already tired, these salads sound and smell very unusual, so they go with a bang.
Bon Appetit!
