I love Mediterranean cuisine, although some dishes at first glance (and at first taste, so to speak) seem very strange and unusual. Take soups, for example. It seems like a combination of fish with tomato is quite banal, but given the thickness of the resulting soup, the spices used in it, it ceases to be familiar.

By the way, it is not so expensive to prepare it, and the variety of the menu is rewarded with the clatter of spoons on quickly emptying plates. Moreover, you can imagine (if the sun looks through the window) that you are sitting again on the seashore, enjoying if not the wind salty, then at least the kind rays of the warm sun, and there is no dirty trick in the world, thanks to which you will not be able to visit the sea in the near future shines ...

Ieh, something I started to fall into pessimism. So let's not suffer, but cook.

Cooking - Mediterranean tomato soup.

For him you will need:

Squid (2 pcs)

Cod fillet (300 gr)

Red pepper

Vegetable broth

Cherry tomatoes

Onion 1pc

Tomatoes in their own juice

Garlic 1-2 s

Thyme

Salt and pepper

How the soup is prepared:

To begin with, I will say that it is better to take a saucepan with a thick bottom (because we will have to fry and stew the initial products in it).

First of all, we wash the cherry tomatoes, cut them, send them to the pan to stew.

Grill pepper, if possible. Well, or in a simple frying pan we bring it to the desired condition, after which we cut it into cubes and the pepper flies into the pan, in the company of cherry.

Then we cut the onion, garlic, together with thyme, salt and pepper, we also throw it into the pan. It would be nice to add a couple of tablespoons of olive oil there.

We cook everything over high heat for a couple of minutes, mix thoroughly, then fill in with vegetable broth and put tomatoes in their own juice into a saucepan.

Cook on high heat for about 6 minutes.

We cut cod into cubes, squid into rings and - to vegetables in broth. Add salt and pepper to taste.

It is not necessary to cook seafood for a long time, otherwise the fish will be boiled, and the squids will be rubber. Three minutes is enough.

Pour into plates, season to taste and... bon appetit!
