Is there a lot of cabbage? We have a lot of. So it's time to prepare salads. There are a great variety of recipes, I picked up two - unusual, from the series "how bourgeois eat". I mean, abroad. Capitalists are all different. They probably also use hazel grouses with pineapples, but they do not disdain cabbage.
Almost proletarian salad
What is the name in the original, I still did not understand, but in terms of composition they reminded me of our, dear, cabbage salad, familiar to everyone. Only the filling is different.
Take: 5 parts of white cabbage (or Peking cabbage can be replaced), two parts of red cabbage, one part of carrots. Cut into strips. We jam with our hands or, as the foreign author of the salad advises, “let the vegetables hang up”. I don't like the idea of letting the vegetables wither, it's easier for me to knead them, especially the red cabbage, because it is often very tough.
Next, we make the dressing: for a quarter cup of apple cider vinegar, add a couple of tablespoons of vegetable oil (to taste the variety), a teaspoon of Dijon mustard, sugar and salt to taste.
Pour the salad mixture with the dressing, mix and let stand. In the original - twenty minutes, but in fact - thirty or forty. You can even an hour if you were too lazy to mash the cabbage.
Asian cabbage salad
Here we need a little more ingredients. Half forks of red and white cabbage, a couple of sweet peppers - red and orange, one carrot and in the original - edamame, unripe soybeans. But since we are in Russia, we will replace them with banal peas. From the greens we take the cilantro - a bunch, and from the nuts - a handful of almond flakes (if not, the peanuts can be fried).
Preparing the dressing. We take three spoons of peanut butter (if not, put the fried peanuts into a blender and scroll with a drop of salt until it becomes viscous dust), a couple of tablespoons of sugar (in ideally brown), a few tablespoons of oil (sesame or olive oil, at worst unrefined sunflower), soy sauce, ymir and freshly ground black pepper - each taste.
Cut the vegetables into strips, add the peas, chop the cilantro, mix everything, top with dressing. We let stand, but not for long - about twenty minutes.
