In summer it is worth eating vegetables, but vegetables are not satisfying. Salad for breakfast, salad for lunch, and in the evening the body is persistently asking for calories. This is not entirely good. Rather, it's not at all, not at all good.

I love the Japanese idea of ​​serving cold but hearty food in the heat. Ice soba is an ideal solution, in my opinion, but the problem is that our people... are not accustomed to the taste of very cold noodles.

Many people do not even realize that cold pasta (noodles are also pasta) - can be delicious. And soba - buckwheat noodles, and not many people like it at all.

Therefore, if you are just at the beginning of its development, you can not hardcore in Japanese, but make the dish more familiar - for example, a salad with buckwheat noodles a la Greek.

It will take:

  • Directly the soba noodles itself (however, you can take funchose, you can use durum wheat pasta, see for yourself according to the situation). How many? Well, imagine how much spaghetti you take to cook one serving and reduce the amount by a third.
  • Cherry tomatoes - 200 grams
  • Sweet onion - red (white is also possible, but it is white, not golden)
  • A couple of spoons of wine or balsamic vinegar
  • Jar of pitted black olives
  • 100 grams of green beans (if you don't like, exclude)
  • Grams 100 feta cheese
  • Pesto sauce, salt, sugar, pepper, olive oil - to taste
  • A couple of basil sprigs

How we cook:

Cut the onion into half rings, fill it with wine or balsamic vinegar, if the vinegar is too sour for you, add sugar to taste.

Boil water and fill the green beans with it for five minutes. We merge.

We boil pasta according to the manufacturer's recommendation. Better if aldente.

Now we cut the rest of the products - cherry, olives and feta - with the classic slicing for Greek salad, tomatoes and olives in halves, feta - into small cubes.

Drain the onion (if you like vinegar, you can leave it, this, again, for your individual taste), mix with pasta or yourself (or funchose, or rice noodles - I repeat once again, you can take anything you want, even spaghetti from horse meat, although there are no calories in them, the main thing is not sprawling), with chopped vegetables and cheese, season with pesto to taste, if it seems to you that such a salad is not enough seasoned, add olive oil and add some salt and pepper. The last step is chopped basil, you can top it up.
