Hello, dear readers of the "Cooking with Natalia Kalnina" channel! I greet my regular guests, as well as all those who came to see me for the first time!

Today I want to share a recipe for a hodgepodge with mushrooms and cabbage for the winter. In winter, hardly anyone can refuse such a soup. You can even serve it as a snack or use it as a filling for pies. Preparing is simple.

Recipe:

Boiled mushrooms - 1-1.5 kg.

Fresh cabbage -1.5 kg.

Tomatoes -1kg.

Onions -0.5kg.

Carrots -0.5kg.

Vegetable oil -100-200ml.

Water -500ml.

Salt -2 tbsp.

Sugar -1 tbsp

Black peppercorns -5-6 pcs.

Bay leaf -3 pcs.

Vinegar 9% -5 tbsp

Cooking method

Pour about 100 ml of vegetable oil into the pan, in the process you can add as needed. Put 500 grams of chopped onion in quarter rings, fry until translucent, now add 500 grams of grated carrots.

We fry everything together for a couple of minutes. Take a large saucepan and add carrots and onions. Fresh cabbage 1.5 kg, cut into strips, remember slightly and add to the pan. Peel fresh tomatoes 1 kg, I do this, dip the tomatoes for 1 minute in boiling water, then take them out and immediately put them in cold water.

Cut into cubes and add to the saucepan. Pour in 500 ml of water, add 2 tbsp. salt without a slide, sugar 1 tbsp, black peppercorns, bay leaf. Stir and leave to stew for 50-60 minutes. 50 minutes passed.

Boil fresh forest mushrooms in salted water and add to cabbage.

We simmer everything together for 10 minutes, add 5 tbsp. 9% vinegar and mix. Simmer for another 12 minutes. Now we pour necessarily into sterilized jars, we close them with sterilized lids. We turn over the banks and wrap them up. Leave it until it cools completely. Now we put the banks for storage. I keep it in a closet in my apartment. It turns out very tasty salt.
