Today I want to share a recipe for mushroom caviar, which I cook instead of a pate for breakfast. Delicate, hearty and incredibly tasty. Can be prepared for the winter. It is prepared simply, without any special problems. You can cook a lot at once. And most importantly, it turns out incredibly tasty.

Recipe:

Boiled mushrooms - 1.5 kg.

Carrots -300 grams

Onion -500 grams

Tomatoes - 1 kg

Garlic -3-4 teeth.

Black pepper -1 / 2 tsp.

Vegetable oil -100-200ml.

Vinegar 9% -2 tbsp

Salt -1 tbsp with a slide

Cooking method

Forest mushrooms, sort out, wash. Put water in a saucepan, add some salt to the water and cook over medium heat for 30 minutes after boiling. In the process, I remove scale. We drain the mushrooms, at this stage I do not rinse the mushrooms so as not to wash off the mushroom taste.

Pour vegetable oil into the cauldron to taste, I pour 100 ml. Put 500 grams of chopped onion and fry until translucent, now add the carrots and simmer everything together for a couple of minutes.

Cut tomatoes 1 kg and twist in a meat grinder, pour into a cauldron and simmer for 5-7 minutes. During this time, twist the mushrooms and carrots with onions in a meat grinder. Add mushrooms with carrots and onions to the tomatoes, add 1 tbsp at once. salt with a slide and black pepper.

Stir and simmer for 1 hour over low heat. Then add 3-4 cloves of garlic, finely chopped with a knife and simmer everything together for 15 minutes. Now add 2 tbsp. 9% vinegar. Leave it to stew for about 1 minute and put it on sterilized jars, close with sterilized lids. We do not turn the banks over, wrap them up and leave them until they cool completely. Store in a cool place. Now open the jar and enjoy.
