Today I am preparing the Italian Cake "Nut" without flour. Soft melt-in-your-mouth nut cakes, crunchy chocolate and whipped cream. It's just the perfect combination to add or add.

Recipe:

For cakes:

Walnuts -150g.

Egg whites - 5 pcs.

Sugar -200gr.

Lemon juice -1 tbsp

Salt -1 / 4 tsp.

Potato starch -1 tbsp

Chocolate -200 gr.

Cream 33% -500ml.

Powdered sugar -2-3 tbsp.

Fry 150 grams of walnuts in a pan, cool. Then grind with a blender.

Divide 5 eggs into white and yolk. We don't need proteins. Pour the proteins into a bowl, add a pinch of salt. Beat with a mixer until foam forms. Now add 200 grams of sugar gradually. And beat until persistent peaks, pour in 1-2 tbsp. lemon juice and continue to beat.

Add 1 tbsp. I have potato starch. Mix again with a mixer. Add walnuts, mix with a spatula.

The dough is ready. We take a ring from a detachable form with a diameter of 18 cm or you can draw on baking paper. put the dough. I have 2 cakes. We bake in a preheated oven at 220 degrees for 7-10 minutes, until light golden. We take out from the oven, at first they are soft, then after cooling they harden.

From this amount, 6 cakes with a diameter of 18 cm are obtained.

Now let's melt chocolate 200 grams, bitter or milk, whichever you prefer. This is most conveniently done in a microwave oven. I put the chocolate on microwave for 15-20 seconds, at a power of 600 watts, then I take it out and put it on again for 15-20 seconds, and so on until the chocolate melts.

Lubricate the cakes with melted chocolate and leave until the chocolate hardens.

Let's prepare the cream. Pour 500 ml of whipping cream with 33% fat into a bowl, beat for a couple of minutes, then add powdered sugar 2 tbsp. and beat until firm peaks. The main thing here is not to kill the cream, otherwise the butter and buttermilk will separate.

Now we collect the cake. Separate the cakes from the baking paper. By the way, if you bake on plain baking paper, then you need to grease with vegetable oil.

Put cakes and grease with cream. Now grease the sides of the cake and the top. We decorate as desired. Today I sprinkled the sides with grated chocolate. Decorated with cream on top and sprinkled with cocoa. Let the cake stand in the refrigerator for at least 2 hours. Can be prepared in advance and refrigerated overnight.

This is how the cake looks after two hours in the refrigerator. We cut and enjoy.
