Hello, dear readers of the "Cooking with Natalia Kalnina" channel! I greet my regular guests, as well as all those who came to see me for the first time!

Today I want to share a recipe for my grandmother's signature fried potatoes. This is the very dish when you need to cook something amazingly tasty from the simplest products. I remember him since his virginity, my grandmother served such potatoes with homemade yogurt and sauerkraut.

Recipe:

Kefir -100ml.

Salt -1 / 3 tsp.

Soda -1 / 2 tsp.

Flour -100-150gr.

Potatoes -1kg.

Water -200ml.

Garlic -3 teeth

Dill - to taste

Butter -30 gr.

Vegetable oil - for frying

Cooking method:

Let's make the dough. Pour 100 ml of kefir into a bowl, add 1/3 tsp. salt, half a tsp. soda, if the kefir is not sour, like mine, add a pinch of citric acid, so the soda will definitely go out and there will be no soda taste.

Stir and add the sifted flour gradually. Knead a soft, elastic dough. I need 120 grams. Put the dough into a bag while preparing the potatoes.

Peel fresh potatoes. Peeled potatoes weight 1 kg.

Cut the potatoes into strips.

Now we take the dough, cutting it into pieces weighing about 10-15 grams.

We take a piece of dough, make cones and now roll the flagellum with our hand. You should get such flagella, my grandmother called them crocodiles.

We take a deep frying pan, I take a wok.

Pour vegetable oil to taste, if you want more fat, add more oil. My grandmother sometimes added lard instead of butter. Fried bacon until cracklings and cooked on this bacon.

Put the potatoes, add half a tsp. salt, black pepper and mix. Now we put crocodiles on the potatoes.

Pour 200 ml of water, the water should cover the potatoes up to half. Close with a tight lid. If there is a steam outlet, close it. Do not open the lid during cooking.

We turn on the stove, set a small fire, I have 9 modes, I cook in 6 modes. Readiness can be understood when the noodles change color to brown, the color changes due to the fact that the bottom of the potatoes is fried until golden brown. It takes me 40 minutes.

Take 3 cloves of garlic and chop it finely. Finely chop the dill. Melt butter 30 grams, add garlic and dill, mix.

Now when the potatoes are ready, remove the lid, grease the noodles with oil and garlic, leave to soak for a couple of minutes.

Now it is possible to serve. Serve crispy potatoes with aromatic zeros with pickles.
