Hello, dear readers of the "Cooking with Natalia Kalnina" channel! I greet my regular guests, as well as all those who came to see me for the first time!

Today I want to share a recipe for hot homemade sausages. I associate these sausages with the New Year, since my mother cooked them and continues to cook them always for the New Year's table. I will tell you about the secret ingredient that makes such sausages not only tasty, but very tasty. And such a dish is also convenient because you can prepare everything in advance 2-3 days in advance and put it in the refrigerator to wait in the wings, it will be even tastier.

Recipe:

Fillet meat - 1.5kg.

Salt -1.5 tsp.

Water -150ml.

Black pepper -1 / 2 tsp. (or to taste)

Bay leaf -3-4 pcs. (1 tsp.)

Garlic -8 teeth

Natural casing -1.5-2 m.

COOKING METHOD

We take meat, you can take any meat, but my mother always prepares them for the festive table only from pork. Meat weight 1.5kg. Cut with a knife into small cubes. The smaller the better.

Put the meat in a deep bowl, add salt 1.5 tsp. at the rate of 1/2 tsp. half a kg of meat. Add black pepper half a teaspoon, and pass the garlic about 8 cloves through a garlic press. And now the main ingredient that will add an extraordinary taste to such sausages is bay leaf.

We take 3-4 leaves and grind it with a coffee grinder or blender. You should get 1 tsp. such a powder. Add to the minced meat. Pour 150 ml of water into the meat for juiciness and mix everything.

Now we need a natural casing, I buy them now in the store in the butcher's department. And my mother used to make them herself.

It will take about 2 meters. In a glass, mix 30 ml of 9% vinegar with 30 ml of water. We dip the intestines into the solution and leave for 10-15 minutes. This will make them more obedient. Now we rinse them, it is most convenient to do this under running water.

We take a meat grinder with a sausage attachment. We put on the shell. And we fill the shell with meat, trying to do it not tightly. Now we divide into portions, it's easy to do. We take and twist in the right place.

Now our sausages must be refrigerated for a day. During this time, they will be marinated and strengthened. You can leave it even for 2 days. And then put it in the freezer if you want to cook it for good.

It took 24 hours to get our sausages with a needle, make several punctures in each sausage so that nothing cracks during frying.

Put on a baking sheet and put in the oven, bake until tender at 200 degrees for 60 minutes, or navigate in your oven.

Now serve hot with a side dish. Very tasty, juicy and aromatic. By the way, they are cold, no less tasty.
