For shortcrust pastry:
Egg yolk -2pcs.
Lemon juice -1.5 tbsp.
Cold water -3 tbsp.
Flour -300gr.
Butter -150gr.
Sugar -3 tbsp.
Salt -1 / 3 tsp.
Baking powder -1 / 2 tsp.
For filling:
Apples -6-7pcs.
Cinnamon to taste
Butter -30gr
Sugar -1-2 tbsp.
For caramel:
Cream 33% -200gr.
Sugar -200gr.
Butter -30gr.
Salt to taste
COOKING METHOD
Divide 2 eggs into white and yolk. We don't need protein. Squeeze out lemon juice 1.5 tbsp. and add 3 tablespoons to the lemon juice. mix cold water and set aside.
Sift 300 grams of flour, and grate 150 grams of butter, just from the refrigerator. Now, with the help of our hands, turn into crumbs, add salt 1/3 tsp., Sugar 3 tbsp., Half tsp. baking powder and mix.
Now add 2 yolks and pour in water with lemon juice. We knead the dough. You should get an elastic dough, slightly sticking to your hands. We put the dough in the refrigerator for 30-40 minutes.
During this time, we will prepare the filling. Take 6-7 apples, peel and remove the middle. Cut the apples into cubes. We take the pan, heat it up, put 30 grams of butter, as the butter melts, add 2 tbsp. sugar and cinnamon to taste, I add 1 tbsp. sugar with cinnamon.
Mix and add apples. We close the lid and simmer for 3-4 minutes under the lid, so that the apples become soft. Now remove the lid and fry the apples without the lid until the liquid evaporates. Remove the filling from the heat and let it cool completely.
We take out the dough from the refrigerator, divide the dough into 2 parts, one part should be about 2/3. Lubricate the mold with oil, mold diameter 24 cm. First, we take most of the dough and roll it out with a rolling pin and put it in a mold, make sides about 3-4 cm high.
Now we put the filling. We take the second part of the dough and roll it into a circle, put it on top of the cake, on top you should get small sides, about 1 cm.
We put in a preheated oven and bake at 180 degrees for 40-45 minutes.
After 30 minutes of finding the pie in the oven, we start cooking caramel. We take one saucepan and pour cream into it, fat content 33%, you can replace it with 20% and heat it, but do not bring it to a boil. At the same time, put 200 grams of sugar in another saucepan.
Do not stir the sugar until it starts to melt. As soon as the liquid appears, proceed to stirring. Cook over medium heat and the main thing is not to burn the sugar, otherwise there will be a burnt aftertaste.
Now that the sugar has melted, pour in the hot cream, it is better to remove the stewpan from the heat at this moment, because the mass will begin to boil violently.
Add 30 grams of butter and salt to taste immediately. Don't like salted caramel, then don't add salt. Mix, caramel is ready.
Now, as soon as the cake is ready, take it out of the oven and immediately pour it over with hot caramel. And we remove until it cools completely.
