This is a very tasty German yeast cake that gets even tastier during storage! Therefore, you can cook a lot of it at once. As a child, such a cake seemed to me the most delicious, the crumb on top seemed especially tasty, which wanted to have even more.

Recipe:

For the test:

Milk -500ml.

Eggs -2pcs.

Flour -700gr.

Butter - 100g.

Sugar -100gr.

Salt -1 / 2 tsp.

Vegetable oil -2 tbsp.

Dough:

Water -50 ml.

Sugar -1 tbsp

Flour -1st.l.

Raw yeast -20g. (or dry 10gr)

For streyzel crumb:

Flour -200 gr.

Butter -130gr.

Sugar -100gr.

For spreading:

Sour cream -2 tbsp.

Egg -1pc.

Sugar -2 tbsp.

Soda -1 / 3 tsp.

Flour -1st.l.

COOKING METHOD

First, let's boil the milk, for this I usually take a pan with a non-stick coating, so the milk does not burn to the bottom. I pour in milk of 500 ml., Put on fire and bring to a boil. To make sure the milk doesn't run away, I put a wooden spatula on top. As the milk boils, remove from heat and let the milk cool. I do not recommend skipping this stage, because with boiled milk, baked goods turn out better and do not get stale quickly.

Pour 50 ml of warm water into a bowl, add 1 tbsp. sugar, add 20 grams of raw yeast, can be replaced with dry ones, then 10 grams will be required. We put 1 tbsp. flour and mix. Leave for 10 minutes to make sure the yeast works. Such a fluffy hat should form.

Pour into a deep bowl, pour in 500 ml of warm boiled milk, break 2 eggs, add 100 grams of sugar, half a teaspoon of salt. We mix everything. Now add the sifted flour and knead the dough. I need 700 grams of flour, the dough should not be too liquid, but it should not be tight either. This is how it slides off the spoon when it is finished.

Lubricate the top with vegetable oil and put it in a warm place for lifting. In the process, the dough must be tamped at least 3 times. It takes me 3-4 hours.

Prepare the treyzel crumb for sprinkling. Sift 200 grams of flour into a bowl, add 130 grams of butter, fresh from the refrigerator, cut it with a knife. Now add sugar and turn everything into crumbs using our hands. We put the crumb in the refrigerator to wait in the wings.

Prepare the spread in another bowl. Put 2 tbsp. sour cream, break 1 egg, add 2 tbsp. sugar, 1 tbsp. flour and 1/3 tsp. soda. Mix everything well.

The dough is ready. I check the readiness by smell, the finished dough smells slightly sour.

Knead the dough and roll in flour. Grease a baking sheet with vegetable oil, put the dough and distribute. Usually I distribute this amount of dough on a standard baking sheet from the oven, today I need 2 pies, so I bake on two baking sheets. If you are unsure about your baking sheets, cover with baking paper. Now grease with a spread and sprinkle with crumbs.

We put in a preheated oven and bake at 180 degrees for 25-30 minutes until tender.

Optionally, you can grease the pie with jam or jam, but then you need to add a couple of tablespoons of flour to the jam and heat it to about 35 degrees, so it will be easier to put the jam on the dough.

My dad's parents are Germans and most of the relatives live in Germany, from there the recipe was brought. And now, many years later, I always bake this cake with pleasure.
