Panna cotta
- Pour gelatin with water and let it swell.
- Heat the rest of the ingredients, except for the jam, until the sugar dissolves; it is not necessary to boil.
- Add gelatin to the milk mass and mix.
- Pour into beautiful containers and put in the cold for 5-6 hours.
- Cover with tangerine jam and garnish with tangerine wedges before serving.
Tangerine muffin
- Pour tangerines with water, bring to a boil, drain and pour cold. Repeat 3 times.
- Pour water for the 4th time and after boiling, cook over medium heat for 1 hour. Drain and beat with a blender into a homogeneous gruel.
- Beat eggs and sugar until fluffy. Stir in tangerine puree.
- Punch the almonds in a coffee grinder to a powder (flour) state. Stir the almond flour with baking powder and add to the dough, stir gently.
- Bake for 50-60 minutes at 180 ° C. Let cool and put in the cold for 5-6 hours.
- Sprinkle with icing sugar or cover with melted dark chocolate before serving.
Apple cheese
- Add sugar to the applesauce and evaporate the excess moisture. Best done in the microwave. I turn it on for 10 minutes, stir it and put it back in the microwave. So for about 5-7 reps.
- Add roasted hazelnuts and cranberries to the thick apple mass.
- Transfer to cheesecloth and shape like a head of cheese.
- Place the load on top and leave it for a day.
- Remove the cheesecloth and dry on a wire rack, turning over from time to time. Ideally, the cheese “ripens for 2-3 months,” 2-3 days are enough for a quick result.
