A simple cake recipe that doesn't even need to be baked and takes no more than 30 minutes to prepare.
I love creating desserts that don't take a long time to prepare. Someone is afraid to mess with cakes, because they are long and dreary to cook. But what if a cake can be made in just 30 minutes?
You will say that this is impossible and you will be partly right. But it only took me 20 minutes to make today's cake. In the headline, I increased the time to 30 minutes and did this on purpose, since it will take an average person a little longer than me.
Looking ahead, I want to say that the cake turned out to be excellent. It has a very delicate raspberry mousse and a soft but locally crunchy oat base. I will not delay, let's cook!
Step-by-step recipe on how to make whipped jam cake
Chocolate base (for a mold 20 cm in diameter)
- Dark chocolate 170 g
- Oat flakes 300 g
- Coconut milk 375 g
I cut the chocolate bars into small pieces. If using chocolate in biscuits, you can skip this step.
Pour coconut milk into a ladle and bring to a boil. Pour over the chocolate pieces and stir until the chocolate is completely dissolved.
Add the oatmeal and mix thoroughly.
I put it in the mold and put it in the freezer. While the base cools down, I'll make the whipped jam.
Whipped jam
- Raspberry puree 200 g
- Sugar 100 g
- Water 100 g
- Gelatin 5 g (I have a sheet)
All the ingredients, except for gelatin, are sent to a saucepan and brought until the sugar is completely dissolved.
I remove from heat and add pre-soaked and swollen gelatin.
I use sheet gelatin and soak it in ice water beforehand. If you are using granular, then follow the instructions on the package.
Stir and beat with a mixer until a fluffy mass is formed.
If you have time, it is better to let the mass cool down and only then begin to beat, so the mousse will turn out to be more magnificent.
I take the base out of the freezer and add the whipped jam. I level the surface and put it in the refrigerator for 2-3 hours, until the whipped jam is completely stabilized.
