I love candied oranges in dark chocolate. These are 2 simple flavors that are so in harmony with each other that I can eat everything I cook at once.
Most often, I cook such oranges after the New Year, when a huge amount of already sliced oranges remains after a feast. It’s a pity to throw them out, but I don’t want to eat windy fruits either.
There are several nuances in the preparation of caramelized oranges, I will talk about them at the end of the article.
How to make chocolate covered oranges, step by step recipe
Wash the oranges well with a sponge under hot water. If they are already cut, then I skip this step.
Cut into slices about 1 cm thick. Pour oranges with boiling water and leave for 2-3 minutes, then drain and blot with a napkin to get rid of excess moisture. This is how I remove unnecessary bitterness from the peel.
In the meantime, I'm preparing the syrup. I bring the water with sugar to a boil, the syrup is ready. I put the orange slices in a saucepan, although a deep frying pan is best, and pour in hot syrup.
Bring the mass to a boil and reduce the heat to low. I leave it to languish for 2 hours without closing the lid. The oranges are done when the rind is almost transparent.
I cover the baking sheet with parchment, put the baking rack on top and spread the oranges. If there is no grate, you can lay it out on parchment.
I send it to the oven at 100 ° C for 20 minutes. If you keep it for longer, the oranges will begin to sugar and will no longer be soft. I take it out of the oven and let it cool completely.
I melt dark chocolate in the microwave or in a water bath. I dip the oranges halfway into the chocolate and put them to cool on a baking sheet lined with parchment.
The chocolate is completely stabilized in 10 hours, but can be served as soon as it hardens.
