All mixed, rolled into rings and in the oven for 20 minutes. I share a recipe for a simple wine cookie.
During quarantine, many pastry chefs and chefs are temporarily unemployed. Most of them, in order not to get discouraged, conduct live broadcasts on Instagram. In one of these broadcasts, I saw an Italian making cookies with wine. Such cookies are called Taralli and, according to the Italian, they are very popular in his homeland.
By the way, I also broadcast live on Instagram. Recently finished a 7 day sourdough bread growing marathon. In order not to miss new broadcasts — subscribe!
The recipe for such a cookie interested me and right after the broadcast I decided to test it in action. The cooking process is incredibly simple. If I hadn’t photographed everything at once, then now there would have been nothing to show you - together with my wife we immediately ate the whole batch at tea.
Step-by-step recipe for how to make a simple cookie with white wine
Ingredients:
- Flour 330 g
- Sugar 100 g
- Dry white wine 100 g
- Olive oil 100 g (Extra Virgin)
Step one
I send all the ingredients into the bowl and mix with a silicone spatula. When all the ingredients are combined, I collect the dough with my hands into a ball and roll it into a sausage.
Step two
I tear off pieces of dough from a large sausage and roll them with my hands into sausages 1 cm thick. Then I fold it into rings.

Step three
I roll each ring in sugar and put it on a baking sheet covered with a perforated silicone mat. If I didn't have such a rug, I would bake it on baking paper.
Step four
I bake cookies for 20 minutes at a temperature of 170 ° C. The first 15 minutes I bake in the top-bottom mode, and for the remaining 5 minutes I turn on convection to make the cookies brown more.
After baking, the cookies may feel damp on the inside, but they just need to give a little time to cool completely. To do this, I put the cookies on the wire rack and leave for 5 minutes. Let's see what I got.
The biscuits are crispy, with a subtle olive oil flavor and white wine aroma. You won't be able to “get drunk” with such cookies - alcohol evaporates during baking, so you can safely treat children too.
