On the eve of the summer season, I wanted to make a berry dessert. Already, berries in the markets are becoming much more affordable than in winter. I chose blueberries for this cake, but other berries, such as strawberries or raspberries, will work as well.

Step by step recipe on how to make berry cake

Biscuit

Ingredients for 3 layers of 16 cm in diameter

  • Butter 105 g (room temperature)
  • Sugar 200 g
  • Eggs 2 pcs
  • Flour 280 g
  • Vegetable oil 45 g
  • Kefir 200 g
  • Baking powder 10 g
  • Berries 200 g (I used blueberries)

Beat butter with sugar with a mixer until smooth. Add eggs and half flour, beat until combined.

I add all the other ingredients and mix well. The dough should be thick. I add berries and stir with a spatula.

Preparing the dough for baking
Blueberries can be added whole, but it is better to cut the strawberries into pieces and roll them in starch or flour so that the juice from the berries does not change the texture of the biscuit.

Divide the dough into 3 parts and transfer to baking dishes. I bake for 50-60 minutes at 130 ° C.

After baking, I let it cool, pack it in plastic wrap and put it in the refrigerator for 3-4 hours (preferably overnight). During this time, moisture will be distributed inside the biscuit and no impregnation is required.

Cream

  • Butter 200 g (room temperature)
  • Powdered sugar 140 g
  • Curd cheese 720 g
  • Freeze-dried strawberries 20 g
  • Dye 3-4 drops
Cream whipping process

Beat butter with icing sugar until fluffy. Add the color and freeze-dried strawberries and mix. Add the curd cheese last and combine until smooth.

Assembly

I put a little cream on the bottom of the plate so that the biscuit sticks and then the cake does not slide out. I coat each cake with cream. Then I cover the cake with the rest of the cream and level it with a pastry spatula.

If you don't have a spatula, you can level it with a tablespoon. After aligning, I often make such a pattern with a spoon on purpose, the cake looks impressive. I put the cake in the refrigerator for 2-3 hours so that the cream will cool and set. It remains only to decorate. Let's show you what a cutaway cake looks like.
